You have probably heard of 'nice cream' before. I've certainly not invented it, but I whip it up on a regular basis for my littles as a healthy but delicious treat. You can do tons of variations, but I put together this combo & for a change wrote it down! It is always a winner for us. Vegan, free from gluten and refined sugar and delivering a protein punch dressed up in healthy fats - but you honestly wouldn't know it was doing you any good, I promise it tastes creamy & utterly delish!
Serves 2
INGREDIENTS:
Half an avocado, flesh scooped out
2 frozen bananas chopped up
Handful of almonds or a large tablespoon of almond butter
1 teaspoon raw cacao powder
1 tablespoon coconut milk (start with half a tablespoon and only add more if you need to get your blender going - you want to keep a thick ice cream consistency so not too slushy
1 tablespoon chia seeds
1 tablespoon maple syrup
1 tablespoon protein powder (optional - i like an organic whey like the Organic Protein Company or Pulsin's pea protein which have a neutral taste)
METHOD:
Place all the ingredients into a high powered blender or a food processor and whiz up until smooth. Eat fast before it melts!
Top tip: if there are any leftovers, you can put it into a small container & keep in the freezer - it's a little harder than normal ice cream to scoop out so you need to let it sit for a few mins before serving!
