This is just the thing if you want a decadent special occasion accompaniment to my delicious buckwheat pancakes (scroll down for the simple recipe). But it can also be used to dress up yoghurt, a little parfait or can even be used as a healthy alternative to cake icing. it's relatively healthy - well at least it's a sweet treat with no refined sugar! Takes minutes to make - you can have it bubbling away while you're making the pancakes...
Serves 2
INGREDIENTS:
1 generous teaspoon of virgin cold pressed coconut oil
2 tablespoons almond butter
3-4 tablespoons real maple syrup (taste and only add more if you really need!)
METHOD:
Over a medium heat, add the coconut oil to a small saucepan. Once that's warm, stir in the almond butter then add the maple syrup and stir together until it's all melted through together. Should only take a few minutes then you're good to pour it all over whatever you fancy!
