Eating a handful of bitters like rocket before any meal is the easiest way to kickstart your digestion, getting the enzymes going. So not only is this a tasty and super quick salad, it's doing wonders for your liver, digestion and for keeping you feel fuller for longer with the greens, lemon, protein and fibre. And you can whip it up in a few minutes at home & take with with you to work for lunch - just hold off on the lemon until serving to keep it nice and crispy.
Serves 2
INGREDIENTS:
3 tablespoon home made pesto (see blog for recipe)
4 large handfuls of rocket or baby spinach
1 x 400 g tin of chickpeas (well drained and ideally soaked for a few hours)
salt and pepper
half a lemon and drizzle of quality extra virgin olive oil for dressing
Simply mix the ingredients in a large bowl, season and dig in!
- You could add some avocado, feta cheese or sprinkled seeds too.
