I love this sweet guilt-free dish because chia puddings are so versatile. They're great for a quick breakfast topped with some homemade granola or pumpkin seeds, as you can prepare them the night before so it's literally a matter of grab and go from the fridge on the way to the office or school. They’re a good quick after school snack or for an easy pudding and you can pretty them up enough for any dinner party. It’s a super easy way of getting some more protein, fibre and omega 3’s in with the amazing chia seeds...the texture might take a little getting used to for some though! You can do the ultimate cheat & make a pudding with your leftover berry smoothie mix for this too...

We’ve been eagerly awaiting Ella’s new cookbook ‘Deliciously Ella Every Day by Ella Woodward’ and this is the first recipe were trying out from it.
I had two little helpers who were very keen to get involved - the allure of chocolate cake always works!
I have to say it’s the easiest recipe ever - just 6 ingredients whizzed up in the blender. it did take a bit of time in the blender because the mixture’s very thick, but what could be easier?! It’s sweetened with maple syrup so no refined sugar here, chia seeds and it’s main ingredient is avocados so it’s winning on the health stakes, but it’s still very rich so not one to eat everyday!

This is one of my toddler’s fave snacks, and as it’s super healthy, it gets cooked in our kitchen on a regular basis. I really like easy muffin recipes as I find they’re popular with kids as a perfect lunchbox treat, quick breakie or after school snack. Being so full of protein, these muffins will keep them going without any crazy sugar highs as there’s no refined sugar here. I also love them as a post work out snack so they’re an all-round winner.
