Leafy greens are the most readily available super-food ever. They hold more nutrients and vitamins per calorie than any other food, and most people don’t realise that they are actually supposed to eat at least 2 or 3 portions of leafy greens everyday to get their required dose of vitamins A, C, E, K, B vitamins not to mention tons of minerals, fiber and even protein. Studies have shown that our green friends not only help our livers flush out all the toxins, but may play a big part in controlling food allergies, inflammatory diseases and obesity, and may even prevent the development of bowel cancers. So super they need a cape, right...?!

It worked so well with blueberries, I was inspired by Green Kitchen Stories this week to build on that idea and make a simple delicious blueberry pudding. The prep for this is done in minutes, and you can dress it up to serve as a classy dessert for friends, or as a sweet snack anytime. My clients are always looking for a quick breakfast-on-the-go and this ticks that box too. Good post workout snack too.

I had two little helpers who were very keen to get involved - the allure of chocolate cake always works!
I have to say it’s the easiest recipe ever - just 6 ingredients whizzed up in the blender. it did take a bit of time in the blender because the mixture’s very thick, but what could be easier?! It’s sweetened with maple syrup so no refined sugar here, chia seeds and it’s main ingredient is avocados so it’s winning on the health stakes, but it’s still very rich so not one to eat everyday!
